Crock Pot Pizza

This was soooo good!

I didn't measure ingredients on this one. Used my hamburger in other recipes, so I took out 2 frozen hamburger patties, thawed in the microwave and lightly browned it. Threw in 3 handfuls of noodles and enough mozzarella to cover the noodles and sauce.

INGREDIENTS:

Ground beef
Egg noodles
Pizza sauce
Mozzarella
Pepperoni
Mushrooms, olives, ham, any other pizza ingredients that you like.
Garlic, onion, Italian seasoning, whatever spices float your boat

Brown the ground beef.
Boil noodles according to package.
Layer in crock pot.

Cook on low for 3 or 4 hours. Just enough to heat up the ingredients and melt the cheese. Serve with salad, garlic bread.

Don't overcook - I had some leftovers a few hours later. My husband didn't unplug it right away and some of the noodles and the pepperoni were just a touch crunchy.

Mmm...Veggie Pie

I saw a similar recipe on Allrecipes.com and adapted slightly for our tastes and ingredients. Very quick and easy to make! Love that. I accidentally cooked mine on a higher temperature, but I realized it as it was cooking. Whew! So the edges were a little crispy. I'm going to add a picture to this post tonight or tomorrow, or whenever I get a chance.

This was tasty and we got a serving of veggies. Were those benefits outweighed by the fat and calories of the pie crust? Maybe, but at least I got dinner on the table with minimal work and we didn't eat at McDonald's.

Ingredients:
1 pkg containing 2 refrigerated 9" pie crusts
1 can of cream of something soup - I used cream of chicken
1 bag of frozen soup vegetables - 16 ounces
1/2 cup of milk
Throw in some salt, pepper and other spices

Allow crusts to thaw for 15 minutes or so.
Heat oven to 375 degrees F.
Put bottom crust in a pie plate and heat in the oven for about 5 minutes.
Mix everything else in a bowl. Pour into crust that's in pie plate.
Cover with top crust. Crimp edges together. Cut slit in top crust.
Cook for 40 minutes.
Cool for 10 minutes.

GROCERY LIST

Here's my list for my first meal plan. I need to clean out the fridge and freezer and see what ingredients I have in there before shopping tomorrow. I looked up the ad for my local supermarket and many of the things I need are on sale starting tomorrow. YAY!

Here is my meal plan for January. Tomorrow I'll be making a shopping list and Monday and Tuesday I will be preparing the freezer meals. I made this as simple as I possibly could because I am not a fan of shopping, cooking, or clean up. That reminds me - I MUST purchase some crockpot liners.
